Sarah’s Simple Suppers: Cinnamon Rolls

Happy Valentine’s Day!

Want to make something homemade and tasty for the love in your life?  Try these delicious cinnamon rolls.  They’ll fall even harder for you.  Promise.

INGREDIENTS:

unsalted butter, melted- 1/2 cup

whole milk, warm- 2 cups

granulated sugar- 1/2 cup

active dry yeast- 2 1/4 teaspoons

flour, divided- 5 cups

baking powder- 1 teaspoon

FILLING:

butter, softened- 3/4 cup

light brown sugar- 3/4 cup

ground cinnamon- 2 tablespoons

FROSTING:

cream cheese, softened- 4 oz.

butter, melted- 2 tablespoons

whole milk- 2 tablespoons

vanilla extract- 1 teaspoon

powdered sugar- 1 cup

 

DIRECTIONS:

Butter two disposable foil pie/cake pans

In a large bowl, whisk together warm milk, melted butter, and granulated sugar.  The mixture should be just warm- between 100-110.

Sprinkle yeast evenly over warm mixture and let set for 1 minute

Add 4 cups flour to milk mixture and mix with wooden spoon until just combined

Cover bowl with plastic wrap and set in warm place to rise for 1 hour

After 1 hour, the dough should have doubled in size

Remove the wrap and add additional 3/4 cup flour, baking powder, and salt.  Stir well, then tun out onto well-floured surface

Kned dough lightly, adding additional flour as necessary, until dough loses its stickiness and does not stick to surface

Roll dough into large rectangle.  Fix corners to make sure they are sharp and even

Spread softened butter evenly over dough

Sprinkle evenly with brown sugar and cinnamon

Press mixture into butter

Roll up the dough, forming a log, and pinch the seam closed.  Place seam-side down.

Cut log in half, then divide each half into 7 evenly sized pieces. About 1 1/2 inches thick each

Place 7 cinnamon rolls in cake pan, one in center, six around the sides.  Cover with plastic wrap and place in warm place to rise for 30 minutes

Preheat over to 350

To prepare frosting.  In medium sized mixing bowl, whisk together cream cheese, butter, whole milk, vanilla, and powered sugar until smooth

Remove plastic wrap.  Bake cinnamon rolls for 25-30 minutes, until golden brown

While still warm, drizzle evenly with frosting
