Copi fish proving very popular at 2023 Illinois State Fair

The fish formerly known as Asian carp is getting a lot of attention at the Illinois State Fair.

The invasive fish species is now known as copi, and fairgoers can treat themselves to copi rangoon, copi nuggets, copi sliders, and copi-empanadas. Vendors at the fair say the fish has been very popular, and those who’ve tried it say it has a delicate flavor with a creamy or soft texture.

State conservation officials have been promoting the fish and encouraging anglers to help reduce their population in Illinois rivers and Lake Michigan.

The Chicago Sun-Times reports that the Illinois Department of Natural Resources contracted with the Flippin’ Fish Shack to offer fried copi treats to visitors at the State Fair this year.
